Fermentation Could Tone Down the Beany Taste of Faba Beans

B2+ · 3 dakikalık okuma · Kaynak: University of Copenhagen, 19 Ekim 2026

Metin

Dried faba beans hold roughly 25 g of protein in each 100 g, and the plants grow without nitrogen fertiliser in warm and temperate climates. Yet they end up mostly as animal feed, and a key reason is that their taste falls short of what consumers expect from beef, pork or chicken. Researchers at the University of Copenhagen fermented faba bean protein extracts with selected bacteria and tracked how the make-up of the aroma compounds shifted. Lactic acid bacteria reduced the typical beany off-flavours, while Bacillus bacteria produced fuller, umami-like notes, and nutty flavours also appeared. The study measured aroma compounds rather than asking people to taste the products, but a separate tasting study found that consumers’ perceptions matched the laboratory results. In the study, fermentation also lowered anti-nutritional compounds, and fermentation in general can extend shelf life. According to senior author Professor Lene Jespersen, consumers want familiar flavours, so a plant-based meat alternative should not taste of beans.

YDS mini sorusu

According to the passage, one of the main reasons faba beans are mostly used as animal feed is that ----.

  1. their taste fails to meet buyers’ expectations of meat
  2. they need nitrogen fertiliser to grow in temperate climates
  3. fermentation increases their anti-nutritional compounds
  4. lactic acid bacteria give them strong umami-like notes
  5. consumers in a tasting study rejected their nutty flavours

Doğru cevap: A

Metne göre bakla çoğunlukla hayvan yemi olur; bunun başlıca nedenlerinden biri, tadının tüketicilerin sığır, domuz ya da tavuk etinden beklediğini karşılamamasıdır. Bakla azot gübresi olmadan yetişir; fermantasyon besin karşıtı bileşikleri artırmaz, azaltır; umami benzeri notaları laktik asit bakterileri değil Bacillus bakterileri verir; ayrı tadım çalışmasında tüketicilerin algısı laboratuvar sonuçlarıyla uyuşmuştur, fındıksı tatların reddedildiği söylenmez. Bu nedenle doğru cevap A’dır.

One main reason the beans are fed mostly to livestock is that their taste falls short of what shoppers expect from beef, pork or chicken.
